Valentine's Day Recipe - Belgian Biscuits
Not long to go now until Valentine's day is here.This week's recipe is a biscuit recipe that my grandmother used to make for us when we were children growing up in New Zealand.Normally they are made using circle cutters but I decided to use my linzer biscuit shapes as I am planning on giving them as gifts for Valentine's day.For the icing I am not a fan of food coloring so used some raspberry juice to achieve a delicate pale pink color.
INGREDIENTS125g butter, softened1/2 cup sugar1 tablespoon golden syrup1 egg1 1/2 cups flour3/4 cup cornflour2 teaspoons cocoa1 teaspoon ground cinnamon1 teaspoon mixed spice1 teaspoon baking powder1 cup icing sugar2 teaspoons butter, meltedhot waterdrop of red food colouring *1/4 cup raspberry jamMETHODPreheat oven to 180 C. Beat butter and sugar until pale and creamy, mix in golden syrup and then egg.Add combined sifted dry ingredients and mix to a dough. Turn out onto a lightly floured surface and roll until approx 3mm thick.Using a cookie cutter cut into circles and place on a greased or lined baking tray. Bake for 15 minutes until biscuits are golden and firm.Cool on a wire rack.Mix icing sugar with butter and enough hot water to make a spreadable icing. Dip a skewer into red food colouring and then into the icing mixture and mix until a pale pink colour.Ice half of the biscuits and spread the remainder with raspberry jam.
