Happy Chinese New Year - Sweet and Sour Pork
Happy Chinese New Year. Tonight I will be making sweet and sour Pork, I made it earler in the week and French Boyfriend liked it so much, I making it again tonight.
Sweet & Sour Pork
INGREDIENTS400g pork fillet, trimmed and thinly sliced1/4 cup (60ml) salt-reduced soy sauce1/4 cup (60ml) tomato sauce1 tablespoon white vinegar1 teaspoon brown sugar1 small onion, cut into wedges1 green capsicum, cut into thin strips2 carrots, washed and sliced150g chopped fresh pineappleSteamed white rice, to serve
METHODStep 1Place the pork and 2 tablespoons of the soy sauce in a non-metallic bowl. Toss until the pork is well coated. Cover and refrigerate for 10 minutes.Step 2Place the remaining soy sauce in a small bowl and combine with the tomato sauce, vinegar and brown sugar. Set aside.Step 3Place a wok or large non-stick frying pan over medium-high heat and spray with oil spray. Cook the pork in batches until browned, then remove and wipe out the wok with paper towel.Step 4Spray the wok with a little more oil spray. Add the onion, carrots and capsicum and stir-fry for 4 minutes or until just tender. Return the pork to the wok, along with the pineapple and soy sauce mixture and cook for another 3 minutes.
