French Food Friday - French Apple Cake/s
A is for apple or in French, P is for pomme.We are lucky that we live in a region that produces a lot of apples and we are able to buy direct from the growers.Having won the war with the plums and despite saying I would stay out of the kitchen, I found myself thinking about making a treat for French Boyfriend.So out came the apples and some rum....
French Apple CakesIngredients1 cup (120g) all-purpose flour1 teaspoon baking powder¼ teaspoon salt6 large apples, about 2 pounds (Use a variety of apples for the best result)3 large eggs1 cup (200g) sugar3 ½ tablespoons (49g) rum¾ teaspoon pure vanilla extract10 tablespoons (5 oz or 142g) unsalted butter, melted and cooled
DirectionsPreheat the oven to 350 degrees F. and grease the cake pan you will be using weith butter . You can use a 10-inch springform pan or you could use smaller cake pans, loaf pan, muffin pan - it works with most. Just watch the cooking time as smaller pans take less time to cook. Alternately line it with parchment paper which will make the cake very easy to remove from the pan.In a small bowl, whisk the flour, baking powder, and salt then set aside.Peel, core, and thinly slice the apples.In a large bowl, whisk the eggs for 1-2 minutes until they are foamy. Pour in the sugar, rum, and vanilla and whisk for another minute.Whisk in half of the flour mixture until well-blended then blend in half of the melted butter. Repeat with the remaining flour and butter and blend until smooth....
