BRIOCHE BURGER BUNS
These hamburger buns received an instant "thumbs up" from my picky picky husband, which is rare. They are rich tasting, but light and fluffy. This recipe is defintely my new "go to" burger bun rcipe, that's for sure. I hope you try it.
1 cup warm water1/4 cup warm whole milk2 tablespoons sugar1 tablespoon yeastMix the above ingredients and let it sit 10 minutes to proof~~~~~~~~~~~~~~~~~~~2 eggs (room temperature) (divided)3 1/4 cups flour*1 1/2 teaspoons salt1 tablespoon sugar4 tablespoons butter (room temperature)
In small bowl, lightly beat 1 whole egg + 1 yolk together (reserve the egg white for later in this recipe).~~~~~~~~~~~~~~~~~~~In a stand mixer, combine 1 cup flour, 1 tablespoon sugar, salt, beaten eggs and proofed yeast mixture. Mix with paddle attachment for 2 minutes. Switch to the mixers dough hook and add the remaining flour (1/2 cup at a time), mixing well in between additions.
The dough will seem very sticky, but that's OK. If it is so sticky, that it is unmanagable by hand, you can add 1/2 cup extra flour, but NO MORE THAN THAT. Knead for 7 minutes.
Turn the dough out onto some plastic wrap (scrape the interior of the bowl to get all of the dough). Spray the interior of your mixing bowl with vegetable spray (or a very light coating of vegetable oil) and put the dough back into the bowl. Cover with plastic wrap and set it in a warm place for 1 hour (or until it is double in size).
