The Best Granola I've Ever Eaten
The other day I made this granola and could hardly wait for it to cool before I began snapping off pieces of it to taste. The next morning I couldn't wait to try it with Greek yogurt for breakfast. It did not disappoint!
The recipe calls for old fashioned oats, quinoa, and nuts. So you get the healthy fats, protein, and lots of fiber. It's so, so good!
This recipe and just about everything we've been cooking lately came from The Dude Diet. My family is a huge fan, so much so that our oldest son requested his very own copy to cook for the guys in the house at college. The caption on the cover of the book says it best, "clean-ish food for people who like to eat dirty". It may not be totally clean, but everything we've made is delicious. Many of the recipes serve two which is perfect for us.
Quinoa Crunch Granola
2 1/2 cups old fashioned rolled oats3/4 cup chopped pecans3/4 cup sliced almonds1/3 cup uncooked quinoa, rinsed drained2 teaspoon ground cinnamon1/4 teaspoon fine grain sea salt1/3 cup liquid extra virgin coconut oil1/2 cup pure maple syrup
Preheat oven to 300 degrees. Line large baking sheet with parchment paper.
In a medium bowl, combine the oats, nuts, quinoa, cinnamon, and salt.
In a separate bowl, whisk together the coconut oil and maple syrup.
Pour the wet ingredients over the dry ingredients and stir until well combined.
