The Best Ever Shrimp & Grits Recipe

Today I'm excited to share a new to me shrimp & grits recipe. I've always loved shrimp & grits and never really used a recipe, but rather I just sort of made it up as I went. I recently tried a recipe that was in the newspaper and it is amazing!!! First, you make cheesy grit cakes...and then you crisp them up in a skillet. Game changer I tell you! We had grit cakes leftover so I made breakfast using them topped with eggs over medium and Canadian bacon. They were even better the next day!
Shrimp and Grits
makes 4 servings
2 1/4 cups milk ( I used whole milk)kosher salt 1/2 white grits1 ounce grated sharp cheddar cheeseolive oil4 tablespoons butter (I always use salted)4 ounces deli ham, chopped (I like Boar's Head)1 teaspoon cornstarch1/4 each salt, paprika, cayenne1 lb. medium shrimp, peeled, deveined, tails on, rinsed & patted dry1/2 cup fresh corn kernels2 cloves minced garlic1/2 dry white wine1/2 cup chicken broth To make the grits:
Line an 8x8 pan with parchment paper leaving an overhang. In a large saucepan, heat milk and 1/4 teaspoon salt to a boil. Sprinkle in grits, whisking constantly. Reduce heat to medium, and whisk until thick, about 5-10 minutes. Pull pan off heat & whisk in cheese. Scrape grits into prepared pan; set aside to cool, 10 minutes or more.
