Gluten Free Vanilla cupcakes
Bonjour mes belles,
I do not know about you but I am getting excited about the royal wedding and yesterday I started baking some cupcakes for our guests.
I did not want our guest who is allergic to gluten to go without so I made these and to be honest you would not know as they taste almost the same as the ones that contain gluten.
For me the real difference is in the raw mixture, normally I love licking the spoon but when it comes to gluten free flour, it tastes gritty and I do not envy to lick the spoon.
Gluten Free Vanilla Cupcakes
1/2 cup vegetable oil (or oil of choice)3/4 cup granulated sugar2 large eggs, room temperature1 1/4 cups all purpose gluten-free flour blend 1/4 teaspoon salt1 3/4 teaspoons baking powder1/2 cup dairy-free milk (I used Coconut Milk )2 teaspoons Vanilla Paste OR Vanilla Extract 1/4 cup coconutFor the icing:1/2 cup dairy-free butter (1 stick), room temperature1 teaspoon Vanilla Paste OR Vanilla Extract 3 cups icing sugar2 tablespoons dairy-free milk (I used Coconut Milk ) Instructions:For the cupcakes: Preheat oven to 350°F (180°C). Position rack in center of oven. Line cupcake pan with paper liners; set aside.In a medium mixing bowl combine oil and sugar.Add eggs and beat with an electric mixer at medium speed for one minute.
