Today the French will be celebrating  la Chandeleur, also known as the Fête de la Lumière and jour des crêpes.This is a Catholic celebration of Candlemas, a feast to commemorate the purification of the Virgin Mary and the presentation of baby Jesus. 
Not only do the French eat a lot of crêpes on Chandeleur, but they also do a bit of fortune telling while making them. It is traditional to hold a coin in your writing hand and a crêpe pan in the other, and flip the crêpe into the air. If you manage to catch the crêpe in the pan, your family will be prosperous for the rest of the year.  So you know what we are going to be making today...

Crêpes for La Chandeleur
Ingredients
3 Tablespoons (43g) unsalted butter, plus 3-4 more Tablespoons for the pan1 cup (125g) all-purpose flour (spoon & leveled)1 Tablespoon granulated sugar1/8 teaspoon salt3/4 cup (180ml) whole milk, at room temperature1/2 cup (120ml) room temperature water2 large eggs, at room temperature1 and 1/2 teaspoons pure vanilla extract
Instructions
Melt 3 Tablespoons of butter in the microwave or on the stove. Cool for about 5 minutes before using in the next step. The remaining butter is for the skillet.
